After John and Bethany Letoto unexpectedly lost their jobs in 2023, they had to think fast about their next move. With experience in food service and specialty coffee, an idea bubbled up—a crack seed cream soda. They envisioned a drink for locals by locals, that would transport kama‘āina to small kid time at first sip.
Kalo and Cream craft sodas and DIY syrups ($4 to $13) are now available around Hilo town and on O‘ahu. Flavors include li hing fruit punch, pickled mango and a kūlolo cream soda that retains a smoky, straight-from-the-‘imu aroma. You’ll soon find these syrups in beverages at Drip Studio’s Downtown Honolulu café, as well as at pop-up markets through the holidays.
