Spring is knocking on our door. Soon, we’ll be heading out to soak up the rays, surf and alfresco grub of the North Shore. Ubiquitous as feral chickens, garlic shrimp shacks dot the sides of Kamehameha Highway for miles. Frolic intern Katelyn Pabila recently ranked three of them—now, we’re throwing it open to you.

The garlic shrimp plate has become a staple of local food, right up there with Spam musubi, shave ice and loco moco. Typically, shrimp are fried shell-on in a bath of olive oil and butter with an alarming amount of chopped garlic. A spritz of lemon juice and chopped parsley help cut the richness with acid and verdant brightness. Served atop two scoops of rice to soak up the buttery, garlicky drippings, this is a plate you get down and dirty for.
The thing is, there are nearly 20 options on the North Shore alone, so the question stands: Who makes the best garlic shrimp?
