This Boutique Hospitality Company is Growing Faster Than Bamboo

TableOne Hospitality is a boutique hospitality company that specializes in creating and operating innovative food and beverage concepts that feature established and rising culinary talent. Over the past two years, the company has established itself in various cities around the country, including Los Angeles, San Francisco, and Manhattan. Most recently, TableOne Hospitality returned to the islands in partnership with Highgate Hawaii to open 11 culinary destinations across Highgate’s five new hotel openings, all in less than a year.
The company’s growth is due in part to its partnership and collaborative approach with Highgate, a leading global estate investment and hospitality management company. Together, TableOne and Highgate take restaurants from concept to completion, developing menus, managing training, handling operations, and more.

TableOne’s role in each Hawaiʻi restaurant varies, with some eateries being fully operated under the TableOne umbrella, while others turn to the company for consulting only. With MARA at the Renaissance Honolulu Hotel & Spa, for example, TableOne had its hands in every step of the process. The company created the idea of the Mediterranean experience, curated the menu, and handled hiring and training before operating the restaurant.
The company’s quick growth might also have something to do with TableOne’s faith in kaizen, a Japanese business philosophy that involves all employees and emphasizes continuous improvement.

Whether the rapid expansion is due to the Highgate partnership, kaizen, or something else, one thing is clear: TableOne shows no signs of slowing down. Its next restaurant opening is coming up soon, as Favorite Son will begin welcoming guests at Romer Waikiki at the Ambassador on October 22.
